GAJAR KA HULWA
INGREDIENTS
juicy carrots 1 kg full fat milk 1 liter
sugar 200 gm condensed milk 200 gm(half a tin)
ghee 1 tbsp saffron flakes a few
elaichi (cardamom) powder 1/2 tsp
METHOD
peel and wash the carrots... grate or chop them in a chopper...
pit milk and carrots in a heavy saucepan.. boil till thick stirring occasionally
once it starts thickening, stir continuously.. now simmer and cook till the carrots are softened.
add sugar and cook further till it thickens again.
add ghee, cardamom powder, saffron flakes and condensed milk.
stir on low heat till the mixture collects in a soft ball or the ghee oozes out.
you can add some chopped nuts (cashews, almonds, pistachios) at this point.
serve hot, decorated with cashew nut and almond slivers...

EGGLESS CHOCOLATE CHEWY BROWNIES
Honey graham crackers...8 ozs/225 gms
chocolate chips...160 gms
almonds(unsalted)...8 ozs/225 gms
condensed milk...1 can (400 gms)
vailla essence...a few drops
powder the crackers...melt the chocolate chips in a microwave for 3 mins..
roast and chop the almonds...in a bowl...mix the powdered crackers.. .condensed milk...roasted and chopped almonds ...melted chocolate chips and the vanilla essence... mix well...line a small tray with waxed paper or parchment paper and spread the mixter smoothly
preheat an oven for 5 mins at 180 o C or 350oC then bake the mixture for exactly 20 mins...remove the tray from the oven even if it feels soft...
let it cool and then cut into squares...very easy to make and very yummy

QUICK AND EASY BURFI
INGREDIENTS
Condensed milk 400 gm-1 tin grated cottage cheese 300 gm
Cardamom powder tsp chopped almonds 1 tbsp
Pistachio nuts 1 tbsp silver sheets 2 pc
METHOD
Mix the condensed milk and cottage cheese in a pan and cook on a medium flame stirring continuously.
When the mixture starts thickening, reduce the flame.
When it leaves the sides of the pan and is semi-solid, remove from the fire and spread it on a greased tray.
Sprinkle the cardamom powder and dry fruits on the mixture.
Decorate with silver sheets and cut into desired shapes.
