I tried making it, problems:
pan was tiltied to one side
When I poured the thing it was too hot
In the mixture, only the water was on top
when I poured it, and circulated, the middle part got thin when it's supposed to be fat

Pardon my ignorance in cooking, but logic tells me that to make dosa your pan must be flat and balanced on the stove and the chemical engineer in me tells that, mey be reduce the heat to cool the surface of the pan will make it flow around better. and the mixture should be evenly blended so that the water doesn't come out.
I have never tried..may be my PhD topic..but try what i suggested,may be that might help.
And I am giving cooking tips, a person who burns everything he puts on stove.😕
