I think generally in the society, girls/women are perceived to be supposedly chirpy and fun loving types. A girl behaving like ASR and temper issues would be treated as a badatameez ladki and the the audience will not accept her. She will turn into a total villain because that's the way perception of society works.
Similarly, we (I assume most of these shows are watched by girls/young women) like to see a rich guy with unresolved issue who we like being tamed by this relatable middle class girl, who after a point is changed and evolved by this all consuming love for her. People enjoy these shows vicariously.
Its escapism for most of us, because IRL, we don't get our dupattas stuck on a CEO type hot rich guy's cuffs, and then have romantic moments with him (hell, most of them would be oldies). We don't get someone who will fall so much head over heels in love with us, change his views over time for us, its all a dream world. The whole lot of us are dreamers in varying degrees. We shun reality in some form or the other; ours results from a desire to be loved. Often enough many don't know that they suffer; they do, but it's never a conscious true acknowledgement. These kind of shows glorify "Love". Sure love exists, but the true love is rare, and even if it does exist, the kind they show on TV is far from reality. We may find someone who cares deeply about us, but the reality is the one that comes along can't fulfil all our dreams.
People like Gul and Ekta, they know how to make it work. They probably know the knack of knowing people's desire and how to make money off of it.
Even Stephanie Meyer, when she wrote Twilight, admitted it that she wrote Bella's character in a way and didn't get into much details about her physical appearance so that girls could find themselves in her.
