CHENNA AND FRUIT ENVELOPE
Ingredients
Chenna 1 cup
Green pear, chopped 1 small
Red pear, chopped 1 small
Red apple, chopped 1 small
Green apple, chopped 1 small
Raisins (kishmish) 1 tablespoon
Almonds, chopped 5-6
Cashewnuts, chopped 5-6
Green cardamom powder teaspoon
Powdered sugar 4 tablespoons
Method
1. Make an envelope with aluminium foil.
2. Take green pear, red pear, red apple, green apple in a bowl. Add chenna, raisins, almonds, cashewnuts, green cardamom powder and powdered sugar and mix.
3. Heat a tawa. Put the mixture into the aluminium envelope and seal the open edge. Press the envelope lightly and place on the tawa.
4. Cook for five minutes, turn over and cook for another five minutes.
5. Serve hot in the envelope itself.
FISH IN FOIL
Ingredients
Fish fillets (rawas) 4 (200 grams each)
Ginger, thinly sliced 2 inch piece
Sea salt to taste
Lemon juice 2 tablespoons
Whole dry red chillies, crushed teaspoon
Fresh coriander leaves, roughly chopped 2 tablespoons
Oil 1 tablespoon
Method
1. Make envelopes with two sheets of aluminium foil placed one on top of the other.
2. Take ginger in a bowl. Add sea salt, lemon juice and fish fillets. Mix. Add crushed red chillies and coriander leaves and mix. Add oil and mix.
3. Put the mixture gently into the envelopes and seal the open edge.
4. Heat a tawa, place the envelopes on the tawa and cook on medium heat two to three minutes. Turn over and cook for another two or three minutes.
5. Serve hot in the envelopes itself.
NOODLE AND VEGETABLE PACKETS
Ingredients
Noodles, boiled 200 grams
Carrot, thinly sliced 1 medium
Mushrooms, thinly sliced 8-10
French beans, diagonally sliced 5-6
Broccoli florets 8
Spring onion with greens 2-3
Salt to taste
Fresh red chillies, diagonally sliced 2
Lemon juice 1 tablespoon
Onion, finely chopped 1 large
Oil 1 tablespoon
Method
1. Preheat the oven to 200 C.
2. Make an envelope using aluminium foil.
3. Take carrot, mushrooms, French beans, broccoli, spring onions and greens in a bowl. Add noodles, salt, fresh red chillies, lemon juice and onion and mix.
4. Add oil and mix. Put the mixture into the foil envelope and seal the open end well.
5. Place the envelope in the preheated oven and cook for fifteen minutes.
6. Serve hot in the envelope itself.
