When people are in love they don't round up their partners to a single nickname. The nickname varies with the mood of the person. Like when you want a favour the name is different, when in romantic mood it's different and when angry then the real name like Zoya. So basically all the above and more.

I think he was a very famous poet. So maybe it's just means poet? Not totally sure though.

Mirza Ghalib was a poet. His shayaris are very very famous. So if someone speaks a lot of urdu or do poetry as zoya do.. Near ones start calling that person as Ghalib.

I want him to have multiple nicknames for her! A different nickname for every mood. Ghalib for nok jhok, Sherni when he is encouraging her, beghum Jaan for romance etc.
