This is such a wonderful post, and I think you are absolutely right. What we need to keep in mind at these points in the story, when one or more of the protagonists are most detestable, is that the narrative is leading somewhere, and the writers are trying to say something with their actions. If Dev did exactly what he was supposed to from the get go, there would be no story.
That's of course, not to say that I support his actions. I don't at all, but I also see his actions as a means to an end for the writers, and that is where I am able to look past my immediate anger and put on my analysis hat.
Dev sees Ishwari as a flawless entity, one with no selfish desires, so if he perceives that he has hurt her, he automatically assumes that he must be wrong. When people who believe in god to through difficult times, they console themselves by saying that god has a reason, that he has their best interests at heart, that he is testing them so they can learn an important lesson. It's no different fo Dev. That's the kind of power Ishwari has over him, enough to skew his entire moral code so that it revolves around what pleases/displeases her.
Needless to say, Ishwari does an excellent job of preserving that image in Dev's mind and works very hard to make sure he doesn't see through her. So for me, it's not a surprise that Dev hasn't fully understood her yet, and continues to fall for her machinations. But Ishwari is gradually losing her grip, as proven by the fact that she had to stoop so low. Dev has admitted to Sona that his relationship with his mother is not normal (after he ate dinner in both houses), though he couldn't articulate exactly why. As Ishwari continues to maniulate him, it will become clearer and clearer to him, and when he finally realises that she has been using him, and twisting his arm for her own selfish reasons, rather than for his good or the good of the family, he will snap and I think that is when the extreme reaction you mention will take place.
