Lets share some nice recipes for diwali, which we all can enjoy with our families and friends.

here is one easy and tasty recipe from me.

Walnut Roll

Ingredients
2 tbsp. milk powder
2 tbsp. sugar
cup walnuts(coarsely grinded)
A pinch of nutmeg powder
4 tsp. milk
Silver warq for decoration
1 tbsp. desi ghee
1 cup dessicated coconut

Method

1. Mix milk powder, sugar and nutmeg powder with milk and make a paste.
2. Put desi ghee in a pan, heat it and saut coarsely grounded walnuts in this ghee.
3. Add the paste.
4. Cool it a bit and make ladoos (rolls) of walnut shape.
5. Roll them into coconut and put warq above it and serve.

Rabri

Ingredients:

  • 8 cups whole milk
  • 1 cup half-and-half milk
  • 3 tablespoons sugar
  • 1 teaspoon cardamom powder
  • 1 teaspoon pistachios (crushed)

Method:

  • In a nonstick pan, boil all the milk on medium. (Be cautious while boiling the milk, make sure it doesn't burn.)
  • Mix in sugar after milk becomes consistently thick.
  • Stir continuosly.
  • Turn off heat after sugar dissolves completely.
  • Let it cool.
  • Mix cardamom powder and pistachios after it cooled down.
  • Store in fridge.
  • Best served chilled.

Rabdi remains fresh for upto 1 week if stored in a closed container.

Coconut Barfi

Ingredients:

  • 3 cups shredded coconut
  • 21 ounces sweetened condensed milk (1 1/2 cans)
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cardamom
  • 4 tablespoon butter
  • 1 cup sliced almonds

Method:

  • Grease a 9"inch square baking pan.
  • Combine coconut, condensed milk, cardamom, and sugar in a large microwavable bowl.
  • Mix well.
  • In microwave, Heat on HIGH for 7 min. (Keep stopping every 30 seconds to stir)
  • When the mixture attains a thick consistency, pour it into the prepared baking pan.
  • Spread it into an even layer.
  • Let it cool for 45 min, then garnish with almonds.
  • With a plastic knife, cut into squares.

Walnut Barfi >> this recipe is by Tarla Dalal, and not by me.

Ingredients:

  • 1/2 cup walnuts crushed
  • 2 tablespoons sugar
  • 2 tablespoons powdered milk
  • 2 tablespoons milk
  • 1 pinch ground nutmeg (jaiphal)
  • 1 teaspoon ghee

Method:

  • In a bowl, mix together sugar, milk powder, milk, and nutmeg powder. Keep aside.
  • In a microwave safe bowl, mix together walnuts and ghee and microwave on HIGH for 2 minutes, stirring once after 1 minute.
  • Add the milk mixture, mix well, and microwave on HIGH for 1 min.
  • Remove and spread in a greased 5"inch tray and allow to set for 1 hour.
  • Cut into square or diamond shapes and serve.

Mango Lassi

Ingredients:

  • 1/2 cup mango pulp (frozen)
  • 100 ml cold yogurt
  • 50 ml coconut milk
  • 4 tablespoons sugar
  • crushed ice
  • mint leaves (optional)

Method:

  • Combine first 4 ingredients in a mixer, and blend.
  • Pour into glasses half filled with crushed ice.
  • Garnish with a mint leaf.
