Professor Grubbly-Plank took over Hagrid's lessons during the Goblet of Fire because he was indisposed after the defamatory article written by Rita Skeeter about him. The students had no prior knowledge that Hagrid wasn't coming. So they were surprised seeing a new teacher.

Not once not twice

More than that I was seen

Professor Grubbly-Plank not only appeared once but many times. She was put in charge of the first years during the Order of the Phoenix which was usually Hagrid's job. She was temporarily put in charge of Care of Magical Creatures again that year.

Not in trouble

Though there were many

Dolores Umbridge was responsible for conducting an inspection on all the staff of Hogwarts. While Umbridge pointed out many faults in other teachers, Professor Grubbly-Plank passed her inspection without any incident.

Not the original

But trusted I was

Care of Magical Creatures was originally taught by Hagrid. But sometimes Professor Grubbly-Plank stepped in when Hagrid wasn't available. Even though she was a temporary teacher, Harry trusted her enough to ask her to heal Hedwig when she was injured.
