Thin and tall

I might be called
The probe is a detector which looks like a car antenna.. Hence I used the words thin and tall

Only at dark times I was called

It is a type of a dark detector used to detect concealment spells or magical objects which might pose a danger to the magical community..

With the ones everyone hated

These probes were used by Argus Filch (who every student of Hogwarts hated) on students coming into Hogwarts.. Also the Death Eaters (who are naturally hated by everyone in the wizarding community) stationed guards outside Gringotts..

Not only the one but many who can't be named

Not only the single caretaker Argus Filch but also the many Death Eaters used this

Everything I can and will see

The detector detects all kinds of magical activity and concealed spells or enchantments.. Nothing can escape a detector

Now you gotta tell, who is the actual me

Probity Probes

The answer is definitely magic but also in muggle world..

Dark detectors are also available in the Muggle world..

Connected to the Ministry

The Ministry only introduced Probity Probes.. Hence they are connected

Appearance in books

The probe definitely appears in Book 6 and Book 7.. Appearance in Book 5 is a possibility.. Since Harry went to his hearing, there might be a chance the probe was used on him when he entered the Ministry..

Found mostly near two

The probes mostly made appearance near The Ministry of Magic and at Gringotts.. Also at Hogwarts but not that often

One the head while the other is also huge

The Ministry is the head of the Wizarding community and it is a huge building.. While Grigotts is also a huge place

Adventurous but dangerous not always they were

Harry had some adventures at both the places.. But they weren't always a danger for him..

OMGz, I had been thinking along those lines for a while, but kept negating it as I couldn't exactly fit it in 😆

I finally thought to give it a shot and turns out it's right 😲 😆

I guessed it firstly by 'thin and tall' and that it was mentioned in the last three books + connected to the ministry.

It was in the last book, Harry confunds the guards at Gringotts to prevent them from checking with the probity probes. I gathered that it must have been mentioned in the fifth and sixth book as well, but I don't remember having read the word there...

5th book is a possible appearance.. Harry went to his hearing and so the probe might have been used on him.. It isn't mentioned but assumed coz every visitor is subjected to a search before entering the Ministry..

6th book.. Security is tightened around Hogwarts.. And to prevent dark artefacts from being brought into the school, Filch used Probity probes on the students after they came back from their visit in Hogsmeade and also while going there.. Ron also comments at that point that why does it matter if we smuggle anything out.. All that matters is what we bring in.. And for this Ron was checked twice..
