I am having pandan essence which is working for me very well.

Caryn you can cook without the fenugreek seeds.
My M.I.Law taught me this way.

Pandan leaves is known as screwpine leaves. It is long and dark green. It smells very nice. It smells almost like vanilla. You can get that in Chinese marts in US/Canada. If not, you can get the essence in bottles. So give it a try. Caryn..I don't think the vanilla essence would give us the real nasi lemak flavour coz this is a savoury dish.. Besides we have the coconut milk which itself gives a nice fragrance. Adding a piece of ginger while cooking the rice enhances the aroma further leaving that unique taste on our taste buds. Ginger also helps in digestion since the Nasi Lemak is rich in fat (coconut milk)..😃

Also you can add lemon grass too along with Ginger.

Agreed Sue, but vanilla essence is last resort. To enhance just add a drop. Not too much though.

My mum's version. Ginger paste and pandanleaves are fried over little oil, and then add washed and fully drained rice to the wok. Mix for couple of mintues. . Then transfered to rice cooker, add coconut milk and salt. Athum real kick pah!!!!

Caryn it's better to know to cook a recipe in different ways. We can change a little here and there and bring out different recipes. Good Caryn, let me try your mother's version.Sure ada kick pa.

Kavi, thanks for the Kaya and the other recipes. I love Nasi Lemak. Normally make it on the weekends - usually with Prawn sambal and fried anvhovies. MMMMMMMMMMM tastes sooooooooo gooooooooooooood!

Does some one here have a recipe for home tested Aloo Tikki?
I used to love the Aloo Tikkis my Maharashtrian friend used to bring to school. Years later, when I tried to make it at home using some recipes from the internet, it always bombed - never got it to taste like the ones my friend had. I used the bread crumbs to roll the mashed potatoes in - Was that a mistake?

Any ideas appreciated. Would also like Imli & green chutney recipes 😊
