Sue akka I did not know that it was Punjabi dish.
These recipes are in my M.I Law's collections of olden Kerala dishes. She has a fantastic collection of old Kerala dishes in her file. I am slowly trying one by one. Thanks akka.

Does anyone here have a good home tried recipe for Malai Kofta? When I looked up a recipe on the internet, it calls for potato koftas made with boiled potatoes, baked ricotta cheese and paneer. But it doesn't say how much ricotta cheese and to bake for how long? 😕

And always when I deep fry potato koftas or tikkis, they disintegrate in oil. Any tips on how to make those without breaking down in hot oil?

Jenim, I usually shallow fry tikkis, but what will help is if you make a thin batter with maida and water and dip the kofta or tikki in it first, then roll in bread crumbs, dip again, roll again in bread crumbs and then deep fry. To make the maida dipping batter, I add about a tablespoonful of maida to a cup of water, and heat it, stirring all the while till the maida dissolves. Some of my friends refrigerate the koftas, but I have not tried doing that so far. I find the double coating method works well.

It has been about two months since I last visited this thread, and I was amazed at the number of pages that I had to wade through last night! You all are doing a fantastic job here. I will have to go grocery shopping first before I do any fancy cooking now. I would love to post the recipe for baklava, but I don't know if phyllo dough is available there, so I will first have to find a recipe for making the dough, try it out, and then post.

By the way, I am glad some of you have tried out the mysore pak recipe I sent. I think it was Supree who had posted very nice pictures too. Thanks. I am glad it turned out well. It has been my standard fallback recipe in case something does not work out.

Keep up the good work, Kavitha, Supree, Jas, Jenim, Sue and all others who are contributing regularly here.
