So now that Ruby is no longer in her physical form, what will be the impact of that on Ansh? Will he be free of Ruby, but still controlled by Mohana?

will there be any after effects as Ruby was turned to stone, while she was still holding his mind captive? Remember when Mohana was turned to statue Mridul was already dead?

Wouldn't he know the change, like it happens in most such mysterious stories?

Mohona will control Ansh now. I dont think Ruby can control Ansh as she has lost all her powers when she became stone
