SITAPHAL KHEERNI

Ingredients

Custard apple (sitaphal) 3 medium

Milk 5 cups

Rice, soaked 4 tablespoons

Sugar Free Natura 14 measures

Rice, soaked and ground 2 tablespoons

Green cardamom powder teaspoon

Pistachios, blanched and finely sliced 8-10

Method

1. De-stone custard apple. Keep aside a little of the flesh and puree the rest.

2. Heat milk in a pan. Add rice and cook stirring from time to time.

3. Add Sugar Free Natura and continue to cook till the rice is almost done.

4. Add ground rice and cook stirring continuously.

5. Add green cardamom powder. When sufficiently thickened, take it off the heat and set it aside to cool a little.

6. Add custard apple puree and mix well. Add the custard apple flesh and mix.

7. Transfer into the earthenware bowls (sakoras) and garnish with pistachios.

8. Chill and serve.

PISTEWALI BARFI

Ingredients

Khoya/mawa 4 cups

Pistachios, coarsely chopped 1 cup

Sugar Free Natura 30 measures

Pistachios, slivered 10

Ghee to grease the tray

Method

1. Grease a tray.

2. Take khoya in a pan and roast on medium heat, stirring continuously till it softens.

3. Add Sugar Free and mix. Add chopped pistachios and mix. Cook till it forms a lump.

4. Transfer into the greased tray and spread evenly. Smoothen the top. Sprinkle slivered pistachios and set aside to cool.

5. When set cut into squares and serve.

CHOCOLATE YOGURT

Ingredients

Yogurt 4 cups

Sugar Free Natura 80 measures

Dark chocolate, grated cup

Fresh cream 5 tablespoons

Walnuts, toasted and crushed 15

Method

1. Tie up yogurt in a muslin cloth and hang it in the refrigerator with a bowl beneath it to collect the whey. Once all the excess water has drained away, squeeze the residue through the cloth into a bowl to get smooth hung yogurt.

2. Melt chocolate in the microwave for one minute. You can also use a double boiler to melt the chocolate. Whisk it well, add cream and mix well. Keep aside a little of this mixture for garnish.

3. Add Sugar Free Natura to the yogurt and mix well. Add melted chocolate and mix it with a fork to get a marbled effect. Keep aside a tablespoon of walnuts and add the rest to the yogurt mixture and mix lightly.

4. Transfer into a serving bowl, sprinkle the remaining walnuts on top. Drizzle the remaining melted chocolate on top and serve.
