Cuisine of the Month - Tamil Nadu!

Friends, we have decided to have Tamil Nadu as the Cusine of the Month at IF. My parents are Tamilians and we cook Tamil food every other day! I am vegetarian so can only share veg dishes. Please make sure that you share recipes of your own and please don't copy and paste recipes found on websites. Only share your OWN recipes. Each month we will come up with a new state and share different recipes and cultural cuisine.

There are many Tamil dishes:

  • Dosas (onion, rava, etc)
  • Idli
  • Vada (Methu, etc)
  • Rasam (Tomato, Jeera, etc)
  • Sambhar (Onion, Tomato, etc)

Potato upma

Ingredients:
potatoes-1/2 kg
red chili-1
green chillies-4
ginger-small pieces
mustard seeds-1 tsp
cumin seeds-1 tsp
lemon juice-2 tsp (to taste)


1. Boil potatoes with some salt added.
2. After boiling, peel them and mash them to a paste.
3. Heat oil in a pan and add mustard and cumin seeds, red chillies, and when they start to pop add green chillies and ginger pieces.
4. Now add mashed potatoes and cook until brown.
5. When cools down a bit, add lemon juice.

Urud Vadai (Medhu vadai)

Ingredients:
urud dal-1 cup
salt-1 tsp
green chillies-3 chopped
black peppers-1 tsp
curry leaves


1. Soak 1 cup urud dal in sufficient amount of water for 1 hour and grind into a thick flour.
2. Add salt, green chillies, black peppers, curry leaves and mix well.
3. On wax paper or plastic piece of paper, place balls of the flour and flatten by hand.
4. Deep fry in oil until golden brown.

Tomato Rasam

Ingredients:
tomato-1 large
salt-1 tsp
sambar powder-1 tsp
asafoetida
toor dal-steamed
rasam powder-1 tsp
mustard seeds-1 tsp
ghee
cilantro & curry leaves (for garnishing)


1. Boil tomato in a cooker or by heating in a vessel of water so that the tomato gets mashed.
2. Add water so that the total quantity is 3 cups.
3. Add salt, sambar powder, and asafoetida and cook for about 5 min.
4. Now add steamed toor dal and cook for 2 min.
5. Add rasam powder and cook for 3 min.
6. Heat mustard seeds in ghee and wait for them to pop fully. Then add them to the rasam.
7. Add cilantro and curry leaves.

Brinjal Gosthu

Ingredients:
Brinjal-2 med.
red chillies-2
asafoetida-1/4 tsp
mustard seeds-1/2 tsp
tamarind-small size


1. Boil brinjal in a pressure cooker or roast on flame.
2. Let cool and peel the skin .
3. Soak tamarind in 2 cups water for 10 min. and squeeze out the juice.
4. Heat oil in frying pan and add mustard seeds and wait until they pop.
5. Now add red chillies and asafoetida.
6. Mix the cooked brinjal with the tamarind and add it to the frying pan.
7. Heat until well-cooked.

(Do not let the liquid become very thick-should be watery liquid)

Dosa

For dosa batter:

1 cup urad dal
2.5 cups rice ( any kind will do)
1/4 tsp fenugreeks seeds
1 tsp chana dal

To increase quanitiy made Use a ratio of one is to 2.5 cups of urad dal to rice.

Soak this mixture overnight.
After soaking overnight grind to a paste adding water. Make sure it is the consistency of beaten yogurt.
Add approx 1tsp salt and leave to ferment.

Take the fermented batter and beat it nicely.

Heat a tawa and temper it by the surface of an onion chopeed in half. Pour a 1/3 cup of batter on tawa and quickly spead in a cirlcle . Allow to brown on one side and then flip and dosa is ready to serve.

Tip: If you find hard to spread the dosa. Remove the the tawa from the flame when pouring the dosa or add a little water to the batter to make pouring easier.

You can also sprinkle some water on the tawa to cool it down . This will also make the batter easier to spread.

If at any time you find the the dosa sticking ot the tawa. take the cut onion half and temper the tawa .

This is my first time posting a recipe sorry if its hard to follow or if I have made mistakes.
