Here are some of MY favorites:

Snacks: Fruit Chat, Pakoras, Vegetable Fritters, Chicken Chaat, Samosas, Vegetable/Chicken Rolls, Pani Puri

Main Course Food: Buryani (Chicken, vegetable, etc... whatever you want to use!), Chicken Karahi, Palak Paneer, Chana Masala, Malaee Kofta, Haleem, Baingan Bharta, Dal Tadka , Pav Bhaji, Rajma, Vegetable Korma, Tandoori Potatoe, Bhindi, Karela (my favorite!), Tandoori Chicken, Aloo Gosht, Keema Matar, Aloo Ghobi/Ghobi Gosht

Desert: Besan ke Ladoo, Kheer, Gajar ka halwa, Jalebies (my favorite!), Rassmalai, Sheer Kurma, Gulab Jaman, Custard, Eggless Chocolate Cake

Ok...these are some of the ones I can think right now. if you need more, let me know and I will give you some more!
