Jalal was angry hearing sher shah suri's name coz he was the one who defeated humayun at the battle of Chausa n took over the Mughal empire and the reason y humayun had to spend his time in exile thus indirectly responsible for Jalal's childhood traumas.
I got this from google and I hope history geek can confirm the information or provide new insight into it.

I think Abhay is most qualified to answer this. In my limited knowledge, Sher Shah Suri was regarded as a traitor by the Mughals.

Raja Todar Mal, a Khatri Rajput had served his youth under the administration of Sher Shah Suri and had gained priceless experience in management of Land and revenues. So maybe Toder Mal praises SSS , which hurts Akbar because of some old memories

I have just tried to give PROBABLE REASONS,

why Jalal was fuming with anger, on hearing Sher Shah Suri's name..
