A part of Sai wanted Virat to counter the yoga instructor's narration of the fire dance, because she did not want it to be true. She cannot stand to hear Pakhi and Virat in the same sentence...it breaks her. So, hearing about such an intimate (BARF) moment between the two, she was not able to deal with it. She was hoping that perhaps it's not real.... but by Virat not saying anything, the memory described became reality.
But, as you have said, it was beyond just the facts for Sai. The yoga instructor was also going on about how they were the perfect match, how great their chemistry was. Within this, to Sai, it was implied that the instructor was talking about their love. So perhaps even more than the memory of the fire dance, Sai wanted Virat to at least counter this.... to say SOMETHING that would show that Pakhi did not mean this much to him...because in Sai's mind, whatever Virat-Pakhi had in the past, it still exists...
So yes, when Virat told Sai that he didn't counter the instructor because everything she said was the truth in the past, Sai took it to mean their love. But to her, the past still exists, so that means it is the reality of the present too.
I think that Virat was referring not just to the scenes mentioned by the lady, but to the entire yoga resort experience as a whole. Because in those moments, he did feel a type of "chemistry" with Pakhi... the yoga instructor never once mentioned any sort of love in between them. I thought in a way it was noble of Virat to accept that reality, because he is no longer trying to cover up the truth like he has somewhat done in the past (namely during the post-Harini family drama fight). The only problem was that Virat's reality and what Sai imagines it to be are very different and he is not realizing that...
