Sorry guys, that's not what he meant. If you don't mind, I have shared what exactly happened in that scene below.
Virat's Aai would have arranged for photoshoot and Virat will ask if it was even necessary. Aai will reply saying that when they look at these pictures sometime in future, they will be reminded of this day.
And Virat would reply
"Acchi yaadein toh dil aur dimaag mein rehthi hai, tasveeron mein nahi"
Sai will tell Virat that his Aai was right and that he will be able to see Sai only in those pictures after she leaves the house because he will anyway not remember her face. And Virat would reply that he can tell the same to her too.
Later Sai will also say that if he doesn't want to take her responsibility, he need not and that she will be able to understand. She will tell him that he anyway only married her out of force and so it is understandable.
That is when Virat will reply the below
"Zimmedari nibhane mein aur photo kheechwane mein bohut farak hai, Sai. Aur yeh samajhne ke liye tumhe bohut mature hona padega."
By this statement Virat meant to tell her that he might be forced to take pictures, but it cannot be said the same about taking her responsibility. He only meant to tell that he took responsibility of her on his own accord and not out force. Hence he tells that for her to understand these, she has to get matured.
Virat looked at Pakhi knowing that she would feel uncomfortable or might get hurt and that has got nothing to do with these statements.
Sai brought up the conversation of responsibility because just before the photoshoot, Virat would have suggested Pakhi to guide Sai and Sai would have got hurt that he is not willing to take her responsibility but instead passing it on to Pakhi.
