Good questions. Here are my 2 cents.
1) Pandit can still be brought in to give evidence about being asked to conduct a false marriage. But, the pandit may not be willing because he himself may get charged.
2) He can bring other people to testify to NT's presence like the marriage broker, the other family whom they approached before going to Geet's family, the attendants at the guest house where they lived, etc.
3) He does not seem to be aware of Maan buying the land, and he may try to get some evidence in this regard.
4) He may approach Geet's family in order to bring them as witnesses. (like you said he may be too afraid to do so)
Other than this, I am not able to think of any more points. At this point, I think the focus is on proving NT's presence in India at that time because this is the point on which she falsified the documents to get out. Once her presence is established, then Geet's evidence itself is enough to put her behind the bars once again.
