Most temples here in South depict him only with Rukmini... I don't know the reason why the others aren't depicted... maybe, because while the others were just princesses, Radha and Rukmini were the epitome of Bhakti and sacrifice, Radha's love being superior to Rukmini's. It's mentioned in Devi Puran, Mahadev did tapasya to get Ma Shakti as his wife. She apperaed in front of him in her ferrocious form, but Mahadev wasn't scared. She then told him, will be born as Daksh's daughter & unite with him.

After Sati's death too Goddess Parashakti told him to do penanace to get his wife back in her next birth.

In one of the epi ift was shown, when Parvati was doing penance, even Mahadev sitting under a tree said even he'll do penance to get Paravti as his wife. So both Parvati & Mahadev did penance to get each other as husband & wife
