This is a bit of a stretch but I think the curse on Prithvi is about kings/conquerors rather than Bhudevi's literal marriage. Parvati said that there will be many 'bhupatis' i.e. lords or kings of the earth. A king in the subcontinent would often be regarded as the husband of the earth (just as a husband traditionally is the "lord" of the house and yes, of the wife; a protector and figure of authority). Especially the kings who were considered 'chakravartis' i.e. those who were believed to have conquered the "whole world".
Essentially Parvati has cursed the earth to be forever plagued by strife, by war. Kings will come and conquer the lands, the world but their rule will never last. They will fall to other kings/nations and the cycle will go on and on.

think that's what it means. Like I said, the notion of this being a curse seems familiar but I'm sure they've taken it from somewhere else and inserted it into Skanda's birth story. Problem is they've crammed too many curses in one story. The end result is quite ridiculous.
