Our bread, in Palestine and some Arab countries esp Egypt, looks exactly like this. We make it with corn flour anf my family prefers to add somw wheat flour. We have it with almost every meal.

And, oh, I am hungry at this odd our of the night. Fruits do help in such cases.

I'd love to read all of your stories- in fact, I did read some chapters fron 'Swayamvar', but I don't feel like reading anything these days *shrugs apologeticly* My mind is just so messed up.

Pol Roti (Coconut Flat Bread)






Ingredients:
1 - Flour (Maida) - 2 cups
2 - Freshly Grated Coconut - 1 cup (or 3/4 cups desiccated coconut soaked in 1/4 cup of water till it is soft)
3 - Coconut Milk - 2 cups (but may vary depending on the freshness / juiciness of the grated coconut) (You can substitute milk for hot water too)
4 - Chopped Onion - 1/2
5 - Chopped Green Chilies - 1
6 - Chopped Curry Leaves - 8 - 10 leaves
7 - Ghee / Butter - 1 Table Spoon
8 - Salt to taste


Method:
1. Mix the flour, onion, chilies, curry leaves, ghee / butter and salt in a bowl.
2. Mix in the grated coconut.
3. Next add milk little by little and mix well till all the ingredients come together to form a dough. Take care not to get it too wet. If the dough is too wet add a little bit of flour. The dough is similar to Chapati dough consistency.
4. Let the dough rest for about 30 minutes for better results.
5. Knead the dough and break into balls of about 2" diameter.
6. Flatten on a floured board using rolling pin. Don't roll it too thin as it will be like a papad when cooked.
7. Cook on a heated heavy bottom pan till golden brown on both sides under low / medium heat.


Best when served hot with any sabzi or butter and jam as well.
