Prisoner of Azkaban. That was the turning point of the story, where things started to get really dark. It introduced us to Sirius Black and the background of Harry's parents.

the 3rd one wins for me, hands down! i never really got over fantasizing what it would be like if Rowling set her heart to writing just one more book - about the life and times of the older order members, and their years at hogwarts! =)
