If she was going to give a salty reply, then shouldn't have acted as if she was the greater person by saying that life was too short to waste time on this and that she had better things to do.

That is why she replied to Varun with the exact same thing Rangoli had asked him instead of directly replying to Kangoli and indulging in the mud slinging. If she would have suddenly started interacting with Kangoli, then that would be a 180 degree turn, not this.

Some folks don't seem to know what the word coward/cowardice means. Taapsee making fun of Rangoli on a public platform is the opposite of cowardice. Just because she's choosing not to engage the troll directly doesn't mean she's afraid of anything or anyone. There's more than one way to slay the dragon after all.
