I think she had the good fortune to be cast in a good role Haider provided her. Good roles for mother figures are far and few in between so sometimes actresses who are past their "running around trees dancing" days are stuck in an unavoidable rut because there is A) no creativity and B) no desire or motivation to write for older characters.
Having said that, I do not know anything about how the casting of Haider came about. Were other 40 plus female artists offered the role? Would a Madhuri or Sridevi have agreed to play mother to Shahid? So Tabu showed a lot of self confidence and security in herself and her talent by accepting this role. Giving credit where credit is due.
Tabu played a mother to a grown man in The Namesake (one of her best) too...in general, I think the woman is unusually secure, almost uncaring, both about a personal matter like age and also about her acting abilities/professional choices. It allows her to get into the role, be convincing, step out...and afterwards with her, to be honest, I don't think people even remember that she played a 'mother'...they remember a character more than the age/relationship. I think the other ladies you mentioned simply wouldn't consider anything like it because they are struggling with issues of age (trying to look in style by hiring stylists or going for botox) and perhaps, just maybe, because once upon a time they used to the leading heroines and divas...so it's difficult or a big deal for them and the audience as well to accept them in a role of a middle-aged or old person. Tabu never had that heroine/superstar quality...so it's almost like people view her as a character actor and she works like one too. A unique case that's hard to compare with others, I think.
