@samz. After cropping, go to select-> color range. Go to customize color option, and select the color you want to show. Press shift and select other colrs you want to show. Now tick on invert and press ok. Then go to adjustment and black and white option. It will be done. For more accuracy select thy e brush with black colour and color the parts which want should not be black and white.
