I think they did go OTT in a few scenes but it's probably because they want to hammer this thought into some of the audience members that these two are going to end up together without intending to, especially Anupama. That there is no malicious intent on either Anuj or Anu's part.
Remember that just like some of the characters on the show a lot of viewers will still not accept her falling for another man and getting married for her own happiness (because of her age, gender, and marital status). This show is trying to show such people a different perspective. The CVs have to tread carefully when showing her personal growth because the kind of people she has to deal with in the show also exist in real life. Same regressive thinking. That's why the elaborate dialogues on friendship between them. It works on two levels. One, to show that she is starting to get the companionship and respect that she never got from her ex husband. Two, that Anuj is such a pure soul (and everything that Vanraj isn't) that it is inevitable that she'd fall for him.
I'm expecting her to refuse to marry Anuj just because Baa asked her to. If ever she does it should be for her own happiness. The way Anuj promised never to cross his limits or expect anything beyond friendship from her makes it clear that if their relationship has to go to the next level it will be by Anu's choice only. She will be the one to set the boundaries and expectations in this relationship and knowing the kind of man Anuj is and how much he values her, he will take his cues from her.
The way she asked him never to leave her and explained that she wouldn't be able to recover if she lost him or replace this bond with anything tells you how drawn she is to him.
For those audience members to accept him and their relationship they have to journey with her and fall for Anuj the same way Anupama will, so that when the time comes, they too will cheer for this couple the way Samar does. What we are seeing now is the process by which it will happen.
