There are real life blind photographers so I don't see a problem that Darsh is one.
The accident happened three years ago, so he had time to adapt. I think what they're trying to show is a man who's successful and coping well with his disability but still society sees him as a figure of pity and dismiss his abilities and potential.
As for the mom, I see her over attachment to Darsh as a character flow, I guess it's partly because of the accident and partly because he was always the model son. Similarly her attitude towards the younger son has deeper roots than him being responsible for the accident as was the case in the original show.
About the bride, the mom isn't looking for any wife, she doesn't want someone who's after their money, she wants someone who would love and appreciate Darsh for who he is, although that won't justify her sacrificing the happiness of the younger son if they follow the original story.
So far I like Nandini, she's bubbly, maybe a bit ott but I don't find her irritating, this may change later once the emotional scenes start.
