Daksha was arrogant throughout and in this yagna he insults Lord Shiva by also not giving him the sacrificial offering which is given to the Gods. Sati is very angry that her father is insulting her husband this way. It's humiliating for her in front of all the invited guests and Gods in the yagna.
She says that her body is born of a father who is unworthy. So she vows to be reborn, of a father whom she can respect and who is worthy. And immolates herself in the very yagna.
Shiva is so heartbroken over this and he carries her charred body around in his arms across all the worlds. He becomes insane. Lord Vishnu sees this and to bring Shiva back to his godly status, uses his divine discus and cuts Devi Sati's charred body into 51 parts, which are the various Shakti Peeth temples across the subcontinent today. Each Shakti Peeth has its own Bhairav (aspect of Shiva) to protect it.
After rebirth when Parvati finally approaches Shiva, he is traumatised by the previous incident. He refuses to accept her love because she hasn't yet crossed over the limitations of the mortal body (made of the 5 elements of nature).
As Sati, she was bound by this limitation and that's why she went to Daksh's yagna even after Shiva's asking her not to go (out of love for her father). So she now does ghor tapasya (extreme penance) to get rid of all worldly attachments and to overcome the elemental limitations of a mortal. She becomes successful and is thus also called Aparna (the one who is without material attachments).
This is also a metaphor for the human soul realizing its ultimate truth and attaining consciousness (Sati is the material reality/soul that becomes one with Shiv, the spiritual reality or supreme consciousness). That's why she's also called Shiva's Shakti. She's the energy and power in Shiva. And all life exists only with the coming together of these two.
