When Rolling Stone asked Peter Dinklage what he thought of people saying he was too attractive to play Tyrion, he answered:

"That just shows how much we've come along. That people can actually say that is very kind of them. If I was born 400 years ago, instead of now, I wouldn't have the life I have ... . So I think it's just a good sign of the times that people can say that."

In other words: it's not what you're looking at that's changed; it's how you're looking.

It's not that Tyrion's appearance on the show is that much different from the book version* so much as our attitude towards his appearance is different than that of Westeros. Most of the features that Martin describes as evidence for Tyrion's "ugliness" (features that Sansa finds unattractive) are features characteristic of his dwarfism. Features that Dinklage (whom a great many of us would bang like a screen door in a hurricane) himself shares.

Remember the POV problem, guys. The books let us see only what Martin wants us to see. And our ways of looking are different than that of the characters of ASOIAF (most of the time, although there are some severely medieval attitudes to be found on the tags).

*barring factors like his eye color and scar, which were not adaptational choices but rather practical ones. Your leads need to be able to see and move their faces.
