I agree with you. I used to hate Anjali but after seeing her pain i feel bad for her. She was trying to protect her.

I am not too sure how much Anjali was protecting Astha. I think she was trying to protect Shloke more than Astha. She might be sympathetic towards Astha but as a mother won't she think of Shloke more than Astha. When the show started I used to get confused that why is she trying to bring down Shloke in front to Neeranjan. Now I have started to think that maybe she did not want Shloke to return home. She might think that Shloke is better staying away than in Agnihotri house. Now she might again go after Astha so that Shloke become more protecive about her. Shloke has also told his parents that people should not go after Astha and Neeranjan did not like it. Anjali might do stuffs which according to her might push Shloke away and make him leave the house. Then Shloke will be forced to take Astha with him and will be away from the direct influence of his father.

Anyway this is just my hypothesis..lets see what they show regarding Anjali.

IN front of Shlok and everyone else Anjali will stand against Astha so that Shlok is compelled to stand by Astha as Shlok hates his mom, and Anjali knows that he will do opposite of what she says, she may have not realised that before the wedding, but she has started to realise that Shlok does not love Astha and for Astha not to get the same fate as Anjali, Anjali will do what she can... well at least I hope, we hope :)

she might have been trying to protect herself, because if aastha rocks the boat even slightly, then niranjan will bash up anjali...

Anjali is not even trying to save her daughter's miserable life. Instead she is treating son-in-law as god! I don't think Anjali will ever help Aastha. It has to be other way around. Aastha will stand up for herself as well as for her mother-in-law. But I think this will take a lot of time.
