How can Shyam so blatantly lie when he knows there are too many people who know about his feelings for Khushi (eg. The entire Gupta family). Also He himself admitted to Arnav during the PayAsh wedding about his love for her. He must think the Raizadas are really dimwitted to believe anything that comes out of his mouth.

Actually he is a very shrewd lawyer... and he had played the game so well that he didn't left any clue that might go against him... So he knows even if Khusi. Payal and entire Gupta family accused him they had no proofs with them... So he is a bit confident about it... And he knows that What Raizada family feels about him... He is actually an ideal son-in-law in their eyes...
