Dil Se, Ishqiya. I would also add Omkara to the list. Which was not much of a love story, but a tragi-drama. Nonetheless it captured kareena and ajay's romance in a realistic but mature way.

From down South: Varanam Ayiram explored death, self-destruction and rehabilitation through love quite well. Mudhalvan was also very well done.
