I am not taking it as laugh of pure happiness, although euphoria, rather than happiness was a huge component of the laugh. I also believe the laugh to be a reaction to all the melodrama that has been piling on since the holi wedding. It is a mechanism by body to release extreme tension that has been piling on in buckets. It is the most natural reaction. In the past 8 hours, she went from enjoying romance, to getting her hopes crushed by her family, to her lover abandoning her in anger, to her chasing him and then marrying by mistake. The icing on cake was the consummation of marriage, which I imagine was a good experience. Thus Rishi's poor joke was just a trigger to unleash all the pent up emotion.
