Personally, I think it's just one of those huge flaws in the show because there is nothing Punjabi about it. All the characters speak Hindi, things like pooja and havans and Ram-Sita praying is done, Hindu-like weddings happening, etc, etc. (Btw, in Punjabi weddings, it is only 4 pheres, not 7).
Besides, Nivi never received a mangalsutra and then for her to randomly have it for one episode just further proves that the CTs have just gone bonkers. So if anything, the whole mangalsutra part is just a completely random flaw.
The only hint of Punjabi-ness I saw was probably in NT Dadi and occasionally Hemlata's dressing style. The kind of everyday salwaar kameez they wear looks like the kind I wear (I'm Punjabi Sikh) and my family and any other Punjabi woman I know (except in the show they're rather plain-looking...in the simplest form....).
