His interview with Paris Hilton was hilarious because you could tell there was faint disdain there and he found her vacuous and annoying. He might have read that though in an article, but I do think Bollywood is getting more popular. Ash has been on his show too I think, but it is nice to see that nod to Bollywood. If you want to talk about nods to Bollywood, you should watch this clip where Stephen Colbert references the Amitabh Bachchan and SRK feud. No joke. Skip to the 3 minute mark.

I think bollywood and it's celebs are more known in the UK/Europe than in the US. The media and tabloids like the BBC, Guardian, Daily Mail etc quite often review bollywood films, it actors and the presence it has in the UK especially.
Of course the bigger celebs are more well known, but i've had numerous conversations with non-asians who have a little interest in bollywood and what its all about.
As for Shilpa, she is a household name but is not loved by non-asians as she makes out.
