I think SaJan are going to fall in love before MayUr or either @ the same time along with MN, and here's why I think so,

Going by your criteria, SaJan have had far more eye-contacts, hand touching scenes, awkardness (Gunjan) than MayUr. Plus it seems Samrat has already developed a strong liking towards Gunjan with how he always follows her around, flirts heavily with her, and is into helping her show her "talent"... With Mayank its the exact opposite, he doesn't help Nupur because he has some special liking for her, or any feelings of attraction, he agreed to be Nupurs dance partner based solely on the condition that she helps him out with a project - a pure business deal.... and it will take him a loong loooooooong time to admit his feelings even if he does have them (which I think he doesn't really) Also there are far more romantic SaJan scenes, than those of MayUr..... The latter are mostly bickering with each other...

Lastly even if I agree that MayUrs gaadi has starting moving quickly (which I don't) then I think MayUr ki gaadi is going to kick-stop and come to a halt, and from then on run 120 miles in reverse once Mayank comes to learn the truth that Nupur didn't work on the project....😆 One more reason I think MayUr wont fall in love so quickly....
