🌶️🥭☕ Bell Pepper Mango Latte Modak
A soft, aromatic fusion modak where fruit, warmth, and nostalgia meet a gentle modern note.
Ingredients
Very finely grated red bell pepper
Almond flour
Thick ripe mango pulp (natural sweetener)
Date paste (natural sweetener)
Mild coffee decoction (latte-style, not strong)
Toasted and chopped cashew nuts
A tiny pinch of cardamom (optional)
Method:
Bell pepper is gently cooked until mellow and naturally sweet → almond flour and date paste are mixed in to form a soft dough → mango pulp is folded in for fruit-forward sweetness and the toasted cashews for the nutty flavour → a mild coffee decoction is added just for aroma → the mixture is shaped into modaks and lightly chilled to set.
The idea
The bell pepper acts as a quiet bridge between fruit and warmth. Mango leads with comfort and sweetness, coffee stays subtle and aromatic, and dates round everything off without bitterness.

🍰✨ RECIPE ENTRY
“Laal Ishq” — Roasted Red Bell Pepper & Coffee Cream Phyllo Rolls (Sugar-Free)
Type: Warm plated dessert
Vibe: Valentine’s Day gourmet but comforting
Hero ingredient: Red bell pepper (sweet pepper)
Sweetness source: dates + stevia/erythritol (no sugar)
✅ INGREDIENTS (20 max — I used 17)
For the bell pepper-date jam
Red bell pepper (2 large)
Dates (8–10, seedless)
Vanilla extract
Lemon juice
Salt (tiny pinch)
Water (as needed)
For the coffee cream
Greek yogurt (or hung curd)
Instant coffee OR espresso shot
Stevia/erythritol (a little)
Cocoa powder (optional, tiny)
Cardamom (1 pinch only — optional)
(no cinnamon)
For assembly
Phyllo sheets (or spring roll sheets)
Butter (or coconut oil)
Pistachios (crushed)
Fresh strawberries (or berries)
Rose petals (optional)
Honey substitute drizzle (optional: date syrup or sugar-free maple)
👩🍳 BASIC STEPS (Simple but clear)
1) Roast the bell pepper (the story begins)
Roast red bell peppers on flame/oven until charred.
Peel skin, remove seeds.
You’ll get soft, sweet, smoky pepper flesh.
2) Make the jam (the dessert’s heart)
Blend roasted pepper + dates + vanilla + lemon juice.
Cook 5–7 mins until thick like jam.
This becomes a sweet, fruity, slightly smoky filling.
3) Make coffee cream (Ranveer’s weakness 😌)
Whisk Greek yogurt + coffee + sweetener.
Chill it so it sets like mousse.
4) Assemble the rolls
Take phyllo sheet.
Brush lightly with butter/coconut oil.
Spread pepper-date jam, roll tight.
Bake/air fry until crisp.
5) Plate like a pageant queen
Slice rolls on a bias.
Add a swoosh of coffee cream.
Sprinkle pistachios.
Add strawberries + rose petals.
🌟 OPTIONAL “CHEF WOW” ELEMENT (NOT required)
A micro pinch of pink salt + lemon zest on top right before serving.
It makes the sweetness pop and gives it that “restaurant” finish.

That’s exactly what’s going to happen to you in this final round!
No beauty pageant is complete without some rather hilarious and mind-numbing tasks or questions. And that’s what is going to happen here.

Below you’ll find 2 types of tasks. You must select any 4 tasks to complete – 2 from each section – and send me the responses. Simple. We aren’t limiting the number of people who can do tasks or anything. The only requirement is you have to do 2 from each category.

BUT...
Your responses cannot be any longer than 5 sentences and must be a minimum of 10 words (except Explain It Task 11 and Creative Minds Task 5 where you can send 7 sentences).
You will lose points for giving a clear answer. The funnier and quirkier your responses are, the better your points!
You will lose points if we find that there are similarities between 2 responses to the same task (for example, the exact same response or same idea).
Each task will be judged out of 50 by each judge on creativity, metaphorical work, and quirkiness. This means that for each task you have the potential to earn 150 points.
Responses are due by Feb 12th 11:59 PM IST.
When you send your responses, please clearly denote which task you completed from which section. Something as simple as “Explain It Task # 6” is enough.

Explain It Tasks

5) Explain gravity without using fall, pull, earth, down, or force.
6) Explain why a week has seven days without using numbers or time words.

2) Invent 5 specific but bizarre law rules for a country (eg. no walking backwards on Tuesdays)
3) Pick 5 emojis and describe a situation for each one where it would be inappropriate to use them.
4) Describe a normal object (spoon, stapler, pencil) as if it's a dangerous criminal.
