My di recently made this chutney with kacha aam, she added ginger too and it did taste yummy so I guess I can try it in regular chutney too..

With my limited cooking knowledge I can attest to bolded ingredients going in mint chutney.

Sugar is to enhance the flavour. In the same way we add pinch salt to cake. Infact many Asian cuisines does this like in Thai curry.
Again don't trust me I have limited knowledge in cooking.π
What about samosas?
Store bought to be deep fried. Altgr, I love my brother but not that much to make samosa from scratch just because he had a dream about eating it.

Sugar is used to balance the saltiness of the food as well. It balances the flavour.
