She might have accepted defeat with Vir and they could have tried to make it work with sharing the kids, but Sakshi could have started getting insecure with how close JnM are with Purvi, created some family drama, then custody drama, etc
There was more scope with the positive Sakshi they described from the start of the show
Makers just didn't want to think beyond the usual trope! If they had shown a positive Sakshi, they could have shown her pain, Vir's dilemma, the children also feeling torn - par nahi...yeh sab chod kar they went with Psycho Sakshi

All writers want is lead to be positive and all other characters to be grey/negative
