I didn't get it then but after watching Ram Leela, which was full of raunchy and borderline semi-p0rnographic scenes, I understood that SLB probably didn't want a married actress to be doing such scenes.
Why? Because perhaps he felt it wouldn't sit well with the audience that an actress whose marriage would still be fresh in people's minds, is suddenly doing sex scenes with another man. It wouldn't be that believable and might bomb.
He was also coming off two flops (one in which he cast a married actress Ash opposite Hrithik as her romantic lead, it didn't work), so he must have been particularly nervous, so he let his fears get the better of him. He advised her to postpone her wedding and I think that was not agreeable to her, so she walked away.
Kareena prioritized Saif and her relationship in that moment over her career. SLB prioritized his career over being a decent human being. But it paid off for him as get got a replacement in Deepika and the film did well at thte box office, and Kareena paid the price with back to back flops like Agent Vinod, Heroine, Talaash, Gori Tere Pyaar Mein, Satyagraha, etc.
