It's make zero sense unless they are planning to show her as delusional. But Kunal is not that dumb, not yet atleast.

I feel Dida must have asked him and he must have come to her and she must be saying it difficult and only I can do it and because of the situation, I will help you in organizing it from far. If I hear the precap in this context only then it makes sense else the writer has finally lost it.

She really is very selfish. She's doing this to convince herself of how good she is. I was going to say assuage her guilt but she hasn't shown any. Very recently in the show's world, Mauli confronted her twice - at the puja and in the bathroom - and each time, she seemed so shocked by Mauli's anger and hatred. So this is her way of showing herself ki look, I'm so nice. Even if Mauli is angry, I'll be the bigger person and reasonable one and organise her birthday. She is acting as if Mauli is a kid who's being unreasonably angry and she's the adult that has to do the right thing for the child regardless.

Otherwise, if this wasn't motivated by Nandini's self-serving need to be viewed as good and innocent by all (especially herself), she would understand that it would make Mauli sick to know that Nandini had any part to play in her birthday or any smiles she smiled that day.

Willing to bet that Nandini will see Mauli's smile on her birthday and feel better about herself.

I have started thinking Nandini needs to be admitted to a mental hospital. She is far away from reality and sanity. She seems insane and somehow Kunal seems to support this insane behavior. 🤢 Be shameless and accept that you are in 'divine love' and leave Mauli to do her own thing but don't go around acting like a pair of cray-cray individuals.
