That's because many characters during those times turned out to be evergreen. They were done with heart and soul as well as films that were made during those time. Character development is important for films and should be done realistically.
However, it doesn't mean todays times are necessarily bad. It's the way directors present the character and how actors perform on screen. This decade you had iconic characters like Ajay from Once Upon a Time in Mumbai & Singham and Dabangg with Salman Khan. Farhan Akhtar from Bhaag Milka Bhaag and Aamir Khan who played Mahnvir Singh Phogat. It's a few examples I've given.
