Saanjh was initially content because her Duffer confessed her love for her. That love she thought she could never obtain was put forward so simply and it made her happy.
But then, the truth flashed before her eyes, and despite Arjun's so-called-feelings being put forward, she could do nothing about it.
I believe she was stress-eating. Sometimes when a person finds themselves in a position of despair or a weak point emotionally, they turn to food for comfort - consciously or unconsciously. People usually tend to eat sweets or spicy food when they are stressed, so I guess that was it.
