If I would have to guess, it would be to build this "family" image in front of Ritik to use it as a guinea pig in case things went awry. Think about it this way, if Sangram was to somehow escape and revealed the secret to Ritik or Ritik figured out the truth, Ritik would be put into a huge dilemma. The way Ritik was raised around a loving family probably pushes him to side more with Yamini (and as a marvelous actress, Yamini is very very cunning), but in the slight chance that Sangram can convince Ritik (or Ritik begins to pull away from the family), Ritik has to be pulled back because he is the key to getting the Naagmani. That's why Ritik was kept alive to begin with. If Sangram somehow died in captivity, the entire plan gets screwed. She might turn colors and Ritik might have to retrieve the Naagmani because the siblings he grew up with, he loved, and who had nothing to do with the haveli and Naagmani were being threatened.

If Ritik was raised as an only child, Yamini doesn't have anyone to keep hostage. But having grown up with these siblings - and Ritik deeply cares about them - he will most likely do anything to save and protect them.

So then why doesn't Ritik remember that he has a father? The scenes of the past that we see right now shows Sangram with a kid around the age of 5. Well, Yamini and Anky probably kept hinting that Sangram was his dead uncle (or nobody). That way as Ritik grew up, he was "trained" to see Sangram differently, in case Sangram escapes.

The conclusion is that there is no explanation for anything really. There are just added to further add entertainment to the show, nothing else.
