Khushboo paced up and down, where was Shiplu, he was supposed to be here an hour ago. Ten
more minutes and the curtain will go up and then what? Men! she exclaimed to herself, can't
rely on them for anything. The peeked through the side of the curtain and saw Jai Walia
sitting in the reserved seats. Quickly thinking, she dialled a number, when the person at
the answered, Khusboo rushed, "Jai I know this is short notice but guess which idiot is
late again."
The deep masculine laughter filled her ear. "Khushboo, still having trouble keep Shiplu in
line."
Khushboo annoyed, "Don't laugh Jai. Not all of us are lucky you know. How is Bani by the
way? She didn't come?"
"Bani is fine, she didn't come because she has to take kids to a birthday party. Now what
can I help you with?"
"Well Shiplu was supposed to give lecture on Taking on the Global Giants. Do you think you
can fill in? Please..."
"Yes I can say a few words, I might not be as smooth as Shiplu, but I can get few people's
attention." Khushboo peeked again to see Jai walking to the side door.
A minute later he was stood beside her, "You are looking sexy as ever, Ms Khushboo."
"And you are just as deadly as ever Mr Walia." Khushboo stretched up and planted a kiss on
his cheeks, "Thanks, Jai."
"Good think Shiplu is not here, otherwise he would be taking a swipe at my jaw." Jai
laughed as Khushboo blushed.
The curtains started opening and Khushboo looked at Jai, "Ready."
"Yes, you go and do the introduction and I will take care of the rest."
Khushboo apologized to the patrons for Shiplu's no show and introduce Jai and was pleased
at audience response as Jai strode on to the stage.
The talk was a great success. Almost at the end a sheepish looking Shiplu walked in.
Khusboo just threw daggers at him and refused to talk to him.
When Jai came back stage, Shiplu hugged him, "Thanks Jai. But looks like my work is cut
out. I have major damage to fix."
Jai laughed heartily, "Shiply good luck. If Bani gave me looks like that I would run to the
other side of the world and only return when I can give her something to pacify her with."
Shiplu looked at Khushboo still glaring at him and then winked at Jai, "Don't worry Jai,
wait till we get home and then I will work my magic on the my khushi ki kali."
At home Shiplu making puppy eyes at her came close and said softly, "I promise to make you Pad Thai and Chicken Satay for dinner if you forgive me."
At the mention of her fav dinner, Khushboo winked and said, "I am going to have a soak in tub while you cook and then sit down to a nice candlelight dinner with you. So get busy Shiplu dear. I am starting to feel very hungry."
Pad Thai
INGREDIENTS
* 1 (12 ounce) package rice noodles
* 2 tablespoons butter
* 1 pound boneless, skinless chicken breast halves, cut into bite-sized pieces
* 1/4 cup vegetable oil
* 4 eggs
* 1 tablespoon white wine vinegar
* 2 tablespoons fish sauce
* 3 tablespoons white sugar
* 1/8 tablespoon crushed red pepper
* 2 cups bean sprouts
* 1/4 cup crushed peanuts
* 3 green onions, chopped
* 1 lemon, cut into wedges
DIRECTIONS
1. Soak rice noodles in cold water 30 to 50 minutes, or until soft. Drain, and set aside.
2. Heat butter in a wok or large heavy skillet. Saute chicken until browned. Remove, and set aside. Heat oil
in wok over medium-high heat. Crack eggs into hot oil, and cook until firm. Stir in chicken, and cook for 5
minutes. Add softened noodles, and vinegar, fish sauce, sugar and red pepper. Adjust seasonings to taste. Mix
while cooking, until noodles are tender. Add bean sprouts, and mix for 3 minutes.
Garnish with crushed peanuts, chopped green onions and wedge of lemon.
Chicken Satay
NGREDIENTS
* 2 tablespoons creamy peanut butter
* 1/2 cup soy sauce
* 1/2 cup lemon or lime juice
* 1 tablespoon brown sugar
* 2 tablespoons curry powder
* 2 cloves garlic, chopped
* 1 teaspoon hot pepper sauce
* 6 skinless, boneless chicken breast halves - cubed
DIRECTIONS
1. In a mixing bowl, combine peanut butter, soy sauce, lime juice, brown sugar, curry powder, garlic and hot
pepper sauce. Place the chicken breasts in the marinade and refrigerate. Let the chicken marinate at least 2
hours, overnight is best.
2. Preheat a grill to high heat.
3. Weave the chicken onto skewers, then grill for 5 minutes per side.
