It is 11:45 PM and I can't sleep because I got up at 11 today.
However, today I made this recipe that I have from the weight watcher's book. it turned out so good. My family said to make this again. Therefore, I want to share this with you. I made it with beef.
Spicy Orange Beef (or chicken) and Vegetables
Ingredients for 4 (1 cup serving is only 227 calories, 5 points)
3/4 lb beef top round, trimmed of all visible fat (I picked the round already sliced) or sliced chicken breast)
2 tbsp cornstarch
2 tsps grated orange rind (you can use a big grape size orange and grate the skin)
1/2 cup low-sodium beef broth (or chicken broth if making this recipe with chicken)
1/4 cup orange juice
2 tbsps reduced-sodium soy sauce
1 tbsp sugar
1 1/2 tsp chilli garlic sauce ( I used the brand - A taste of Thai garlic chilli pepper sauce) you can also use chilli pepper and crush garlic into a paste according to the taste, The sauce should be hot..
6 tsp Canola oil
1 tbsp grated fresh ginger (I like ginger so I used 2 tbsp)
1/4 pound green beans, halved crosswise
1 red bell pepper, seeded and cut into thin strips
1 long carrot, cut into matchstick thin strips
Method
Combine the beef, 1 tbsp of the cornstarch and the orange rind in a medium bowl. Toss well to coat and set aside. (I used my fingers)
Combine the remaining 1 tbsp cornstarch, the broth, orange juice, soy sauce, sugar and chili garlic sauce in a small bowl and set aside.
Heat a non stick wok or a large deep skillet over medium high heat until a drop of water sizzles. Swirl in 2 tsp of the oil and add the beef (or chicken). Stir fry until cooked through, about 3-4 minutes and transfer to a plate.
Swirl the remaining oil and add the ginger. Stir fry until it is fragrant about 30 seconds. Add the green beans, bell pepper and the carrots. Stir fry until crisp tender about 5 minutes.
Add the broth mixture and cook, stirring constantly until the mixture boils and thickens about 1 minute. Add the beef (chicken) and cook until meat is hot about 1/2 minute.
I served the above over the boiled rice.
i boiled basmati rice and some salt in open patila and when the grain was cooked, drained the water. This way you get rid of the starch (of course the rice is stripped of other nutrients as well)

Bhavni, I made the yogurt your way. Instead of putting in the microwave, I put it in the owen and turned the light on. It was a bit sour, but I added milk and stirred it and put it in the fridge. I used homo milk.
