Jaz- its a mock "oyester" sauce for those vegetarians...I have both at home - veg and non-veg oyester sauce. Its available at the super-markets. I am sure you could get them in SA.😆

VEGETABLE KEBABS
Ingrdients
1 brinjal
1 yellow capsicum
1 onion
2 tomatoes
4 fresh button mushrooms
4 tbsp French dressing
Butter
pepper

Method
Cut all vegetables into bite-size pieces. Pierce through a skewer in any arrangements you like and brush a little butter. Bake in a moderate oven for about 15 minutes. Brush with French dressing & sprinkle a little pepper. Return to the oven for another 5 minutes. Serve with grilled mock meat/prawns or tofu.

SWEET AND SOUR TOFU

Ingredients
(1) 4 pieces tofu
(2) 1 onion, quartered
(3) 2 slices of canned pineapple, cubed
(4) 2 tomatoes, quartered
(5) 50g snow peas
(6) 1 fresh red chillie, sliced

Sauce
(1) 1 cup water
(2) 2 tbsp tomato ketchup
(3) 1 tbsp plum sauce (available at the supermarkets)
(4) 1 tsp sesame oil
(5) 1 tsp soy sauce
(6) 1/2 tsp sugar
(7) salt and pepper

Method
(a) Cut the tofu into cubes and fry over high heat till golden brown. Remove from heat and set aside.
(b) Mix all the ingredients for the sauce.Thicken the sauce with a little cornstarch if necessary.
(c) Heat 2 tablespoon oil in a wok. Fry the onions till fairly soft and add all the other vegetables. When snow peas are cooked (do not over cook), pour the sauce over the vegetables. Lastly add the fried tofu. Season with salt and pepper. Serve with rice.

GULUB JAMUNS

Ingredients:

For syrup:
2 cups of sugar
1 cup of water
2 cardamom pods crushed
Little saffron optional
Little rose essence

The Jamun:
2 cups of powder milk

1 cups of heavy cream.
1 tbs melted ghee

Method:
Boil the sugar with the water. Add the crushed cardamom.
When all the sugar is dissolved and boiling, remove.
Add the saffron and the essence. Keep aside.

Combine the milk powder, all purpose flour, baking powder,
And the melted ghee in a bowl.
Add enough heavy cream and knead it to make a soft dough.
Now take a portion and gently roll between your palms to make
Smooth balls.
Heat oil in a pan, ( you can use ghee also) until it is hot.
Lower the heat to medium and deep fry few balls at a time.
The jamuns will slowly rise to the top if it is fried in the right temperature. When they are browned on all sides, remove
And put it immediately in the warm syrup.
Let it soak in the syrup for about 30 minutes.
Serve it warm or cold.

Note: I made them quite big, you can make them smaller.

I personally do not like the word "Goodbye"..!!😔
