In my opinion, she wants him to come out in the open and confess. If he had informed her earlier (that is, before her conversation with Hemant Bhai) then it would have been her duty to inform Hemant Bhai and Neela of his marital state and decline the rishta.
But Ashish chose to reveal his truth after her commitment to Hemant Bhai and Neela. And Ashish encouraged Neela too into believing that he was willing for her rishta - which in turn has made Hemant Bhai more desirous of this rishta. So now it is up to Ashish to reveal his relationship with Asha to all concerned parties and take a decision regarding whom he wants as a life partner.
The minute Dayaben became aware of Ashish's relationship with Asha - she has taken steps to ensure that this matter come to a show down with Ashish deciding one way or another. No more double life for Ashish. Dayaben is not interested in pulling wool over Hemant Bhai and Neela's eyes. She wants Ashish to take a stand and reveal his secret and declare his marriage to Asha publicly. Or choose to wed Neela and forgo Asha and Avni publicly.
Recollect what Ashish had written in his email - he and Asha are happy to live in stealth but he wants to come out in the open because Avni is asking him tough questions. No where did he mention that he is apologetic for the situation with Hemant Bhai - nor did he ask his mother to help him convey the truth to Neela and Hemant Bhai. So, Dayaben was cornered into a situation where she needed to find a solution that would force him to come out and state the truth to Hemant Bhai and Neela.
