LAZY RECIPIE 2 : Cook without Onion, ginger/garlic

Most of the time consuming process in cooking is bhooning onion-GG paste…….There are many good ways to skip this task……the following are called "No Onion tears Recepies:

No Onion, No Tears …..

Basic recipie for Cabbage, Green beans, Okra ( Bhindi), Potato, Cauliflower and Lauki (Doodhi)

Cut the vegetable and keep aside.

In a bowl mix Salt, Red chilli powder, Dhania powder, Turmeric Powder, MDH Meat Masala . Add some water and make a thick paste. Keep aside.

Heat 2 TS Oil in a Pan. Crackle some Jeera and whole Garam Masala. Quickly add the masala paste, fry till done and then add Tomato puree/ chopped tomatoes. Do well, then add the chopped vegetable. Cover and cook on medium heat. Stir 2-3 times so that it doesn't stick. Serve hot….

IMPORTANT TIP : MDH Meat masala is a very good taste enhancer. It is vegetarian and try using it once with your regular masalas to make yummy curries.

easy peasyRecipe For Upma:(namkeen halwa)
Semolina/sooji/Rawa: 1 cup
3 tbps oil+ghee
I tsp each: mustard seeds, begal gram ( chana dal) udad dal ( black gram)
1 tsp grated ginger
2-3 green chilles split and de seeded
a few curry leaves ( karhi patta)
8-10 roasted cashewnuts
2 1/2 cups water.
Corainader for garnish
salt to taste

1 Tbsp lemon juice -optional

heat oil ghee mixture in a pan , add mustard, the two dals and roast till mustard splutters and dals turn golden, now add curry leaves, green chillies and ginger.

Add the water and bring to boil , salt to taste, gently add the sooji as a stream stirring all the time to avoid lump formation.

Turn off heat as soon as all water is absorbed . Add lemon juice and mix well. garnish with coriander and cashewnuts

Presentation of Upma:

In little bowls ( katoris) place finely chopped coriander and roasted cashew nuts, cover with upma and invert the bowl onto a tray, alternatively in a big dish do the same and invert the whole dish onto a tray.

Variation: can add mixed chopped frozen veggies when water is boiling , or even shelled peas, finely chopped cabbage gives it a sliky texture, but add it to the oil before putting water . I personally do not add onions.

TIP: roast all ingredients as the above recipe ,.Turn off the heat and add sooji and rosst lightly in the remaining heat. Allow to cool, store in air tight container .

As and when required bring double the quantity of water to boil and add this sooji mix. Very handy for making instant upma.

Let me know how you liked it and how it tasted 😉
